Method:
1 Cut the cheese into 4 even-sized “steaks”. Mix the chives and breadcrumbs and season with pepper. Dip the cheese in beaten egg then carefully coat both sides with the breadcrumbs.
2 Dip the beaten egg and coat with crumbs once more to give an even coating.
Heat a scant 1 cm (2/3in) oil in a large frying pan over moderate heat and fry the Tilsiter “steaks” for 2-3 mins on each side until crisp and golden. Drain kitchen paper. Serve at once with fresh baby spinache leaves and tomato slices.
